Ellis was a four year letterman in football and track and field. While finishing in the top four nationally in each year, he averaged 48.3 yards per punt in 1965 which led NAIA schools. Ellis holds school records for longest punt, 87 yards and punt average for a game, 55 yards both vs Whitworth College in 1965. He held school records in the shot put and javelin, won district championships in both events and in 1965, Denny won the NAIA national championship in the javelin with a throw of 216-2. Ellis became the school's first track and field All-American in 1965.
